Chicken fajitas with fresh guacamole & pico de gallo

The Chicken was sauteed with red bell peppers, onions, and a few sprigs of cilantro, with a splash of white wine.  I then topped it off with homemade pico de gallo and guacamole.  I also made my own re-fried beans (not pictured).

Pico de Gallo Recipe:
2 tomatoes diced
1 onion finely diced
1 bunch of cilantro (pull the leaves off of the stems and chop)
1 jalapeno pepper finely diced (optional)
3 limes juiced
Kosher salt to taste
Black pepper to taste

Instructions: Mix all of the ingredients, and taste as you go along to achieve the right balance of salt and acid.


Homemade re-fried beans are SUPER easy.  Here's how I do it...

Ingredients:
2 cans of pinto beans (low sodium if possible)
1/2 tsp of cumin powder

Instructions:
Rinse the beans in a colander and place in a small pot.  Cover the beans with a 1/4 cup of water and cover and cook on high until the water starts to boil.  Turn off the heat add the cumin and blend with an immersible blender until you reach the desired consistency.  You can add more water and any other seasoning you like to get to the desired consistency and level of spice that you prefer.
