Cuban Style Beef Picadillo

Growing up my mother would make this a lot.  It's made very quickly (under 30 minutes), and it's healthy as you can make it with lean ground beef or even ground chicken or turkey.  Either way it is delicious!


Ingredients:
1lb lean ground beef, turkey, or chicken (if using poultry you will want to increase amount of liquid to keep meat moist)
1 large onion diced
1/2 green pepper diced
1 large tomato diced
1tbsp tomato paste or ketchup (I usually use ketchup because I very rarely ever have tomato paste)
1/2 cup of white wine or chicken stock (low sodium
1/4 cup of raisins
4-5 olives and a tbsp of their juice
5 minced garlic cloves
Garlic powder
Kosher salt
ground black pepper
1/2 tsp cumin
1tbsp olive oil


Directions:
Saute the onion and green pepper in the olive oil until onions soften.  Add tomatoes and ketchup/paste, olives, raisins, and garlic. Cook until tomatoes break down and have colored the onions.  Push all ingredients to the outer edges of pan and add meat to center of pan, and begin to break up meat with spoon.  Begin adding spices to taste, and gently mix ingredients in pan.  Add liquids (add more if you feel the meat is not moist enough) and bring to a boil, then drop heat to medium low and cover.  Cook for 5 minutes and turn off burner.  Serve over rice.
